Healthy food of the week: Baked glazed ham, mixed vegetables, mashed potatoes

Leftover idea: Glazed ham wrap

Here’s a meal to get everyone in the mood for the upcoming holidays: baked ham with a flavorful apricot/pineapple glaze, mixed greens, and mashed potatoes. To top it off, with just a slice of baked ham along with a healthy whole wheat wrap, you can quickly make it for lunch the next day.

Think of it as a pre-Thanksgiving warm-up. In fact, you might enjoy this glaze so much that you’ll use it for your main course next Thursday or when you want to prepare a ham or turkey. Try it and see what you think. It is very simple to do and takes less than 10 minutes.

Ingredients

(6-8 servings)

– 2-3 pounds of precooked ham

Indications

1. Preheat oven to 325 degrees. Hopefully the pre-cooked ham you bought already has pre-cut cuts. You can simply take a sharp knife and continue these cuts 3/4 of the way to the bottom of the ham. Doing so allows the glaze to escape and flavor the entire piece of meat and not just the outside.

2. To make the glaze sauce, first chop a white onion into small pieces until you have about 1/2 cup. In a saucepan at low temperature, put the 2 tablespoons of butter together with 1/2 cup of diced onion. Stir well for about 6-7 minutes.

3. Add 1/4 cup dark brown sugar, 2 tablespoons Dijon mustard, 8 oz. of apricot preserves, and 3 slices of pineapple but only put in 1/4 cup of the pineapple juice from the can (do not add the whole contents). Continue to stir the mixture well for another 7-8 minutes on medium/low heat.

4. Place the ham in a baking dish and carefully pour the glaze mixture over the ham. Try to open the slices with a fork or other utensil so that the glaze has a chance to cover each side of each piece. You can place a pineapple slice or two on top and use the rest of the pineapple slices that should still be in the can around the whole ham.

5. Place the casserole uncovered in the oven on the center rack and bake for one hour. If possible, carefully remove it after 1/3 of the cooking time has passed so you can put the glaze back on the whole ham, and again after another 1/3 of the time has passed. This really helps the meat to be covered in that delicious apricot pineapple glaze.

6. While the ham is cooking you can start boiling the frozen mixed vegetables. These will only take about 15 minutes, so you may want to wait a bit until the ham is half cooked. When ready, boil 4 cups of water and add an entire bag of frozen mixed vegetables.

7. Finally, the mashed potatoes (which take less than 8 minutes), check the side of the box for instructions on how many servings you want to make. Note that if you plan to eat mashed potatoes as leftovers for meals or to add to ham wraps, you may want to make a little extra so you have plenty later.

8. When serving the right portion size, pour a tablespoon or two over the ham and even the potatoes if you like. This polish is delicious so we hope you like it!
